If it were up to me, these little beauties would have been in a blackberry cobbler. This is definitely one of those times when I am glad I listened to him.

I will admit, I bought all the ingredients to make a fresh and fit salad recipe. Promise.

But then I started craving fried chicken.

This chicken salad recipe is one of the best salads ever. Loaded with fresh blueberries, ripe tomatoes, roasted sunflower seeds, healthy greens and more. You get all the benefits of a fit salad.

Fresh okra is at the top of my summer vegetable list. I love it breaded and fried, I love it stewed with tomatoes. And I especially love okra roasted with sweet bell peppers and Vidalia onions.

This easy and fresh side dish is full of flavor. Plus it is super-healthy.

Simply seasoned with olive oil, garlic, fresh lemon, salt and pepper, you will soon be addicted to this awesome summer side dish.

(We consumed this entire pan as an afternoon snack. True story!)

This by far has been one of our favorite desserts to make. These Fresh Strawberry Tarts are made with quality store-bought puff pastry and ripe and sweet strawberries. Maybe one day we will try to make our own puff pastry, but when we weighed out our time vs the tasty store bought one…we went with the pre-made variety.

There is no shame in taking a short cut every now and then.

Oh, and home-made freezer jam. (Courtesy of my super sweet mother in law, Pattie.). These personal sized tarts are a tasty sweet-treat for dessert or breakfast.

This is quite possibly one of the best sandwiches I have ever put into my mouth. A Ham Reuben Sandwich recipe. Big sandwich with bigger flavors. Everyone has probably had the classic Reuben sandwich, right? Corned beef piled on rye bread, topped with Swiss cheese, sauerkraut, and some 1000 Island dressing. Delish.

But may I present you with the idea of a Ham Reuben Sandwich recipe instead?  And not just any Reuben sandwich. A Killer Ham Reuben Sandwich. Layers of thin deli-sliced black forest ham between two pieces of buttery toasted New York style rye bread.
