Don't you love the mornings of fall?  There is a specialness in a crisp, bright fall morning that is like nothing else in the world. Especially on the weekend, wrapped up in a blanket and enjoying your favorite morning cup of coffee.

Then your second cup. And maybe a third. Those mornings are what inspired me to make this moist Spiced Apple Crumb Coffee Cake. That and the fact I was craving sweet cinnamon-spiced apples. You know, the usual.

    Spiced Apple Crumb Coffee Cake

    Spiced Apple Crumb Coffee Cake

Can you smell this cake yet? Seriously. I broke out all of the favorite fall spices for this crave-worthy coffee cake recipe. Not just cinnamon. Not just nutmeg.

But cinnamon and nutmeg and ginger and allspice. All of the flavors that apples love best. Or that love apples. Either way, it makes a tasty cake to pair with my hot, steamy cup of coffee flavored with my favorite Dunkin’ Donuts® Extra Extra Creamer.

You know me, I like extra extra everything.

Chopped apples with brown sugar, cinnamon and spices next to a bowl of fresh apples

Coffee cake is really one of those classic time-honored recipes you can't go wrong with. Moist but crumbly, with just the right amount of sweet, it is one of my favorites. (My hubby likes it, too.)

Plus, you get to eat cake in the morning, and that is always a win in my book.

A yellow bowl of cake mix with beaters in it

One of our favorite things about cooking and creating recipes is working with great brands we love. Case in point, Dunkin’ Donuts® and their line of Dunkin’ Donuts® Coffee Creamers.

We wanted to incorporate our very favorite coffee creamer into this recipe. Why not?

Dunkin’ Donuts® Extra Extra Creamer is made with real sugar, milk and cream. It makes my coffee taste rich and smooth, so naturally it would work in my coffee cake recipe.

Dunkin Donuts Creamer with a bowl of apples in the background

I hope a light bulb just went off all over America. Yes, you can use all of your Dunkin’ Donuts® Coffee Creamers actually IN YOUR COOKING.

From the classic Dunkin’ Donuts®Vanilla Creamer to the to-die-for creamy Dunkin’ Donuts® Caramel Creamer, fall baking is made extra special with the addition of something...a little extra.

    Calories

    Ingredients

    Spiced Apple Mixture

    • 2 apples peeled and finely diced
    • 2 TB brown sugar
    • ½ teaspoon cinnamon
    • ¼ teaspoon ground ginger
    • ¼ teaspoon nutmeg
    • ¼ teaspoon ground allspice
    • Pinch of salt

    Crumble Topping

    • 1 cup AP flour
    • ½ cup butter softened
    • ¼ cup brown sugar
    • ¼ cup sugar
    • ½ teaspoon cinnamon
    • ¼ teaspoon ground ginger

    Cake

    • 1 cup AP flour
    • ½ cup sugar
    • 2 eggs
    • ¼ cup butter softened
    • 6 TB Dunkin Donuts Extra Extra Coffee Creamer
    • 1 teaspoon baking powder
    • 1 teaspoon vanilla
    • ¼ teaspoon salt
    • ¼ teaspoon cinnamon

    Instructions

    Spiced Apple Mixture

    • Combine the diced apples and all ingredients in small bowl. Set aside.

    Crumb Topping

    • Stir together all dry ingredients. Work in the butter with your hands or fork until it is crumbly and has a sand like texture. Set aside.
    • Preheat oven to 375 degrees. Grease and flour a 9 inch cake pan.
    • In a bowl, stir together the flour, baking powder, salt and ¼ teaspoon of cinnamon. In a separate larger bowl, beat the sugar and butter together until light and fluffy. Whip in the eggs and vanilla.
    • Reduce the mixer speed to low and add one tablespoon of creamer, then some of the flour mixture. Repeat, alternating between creamer and flour mixture until the batter is smooth.
    • Gently fold in HALF of the reserved spiced apple mixture. Pour the batter into the prepared cake pan.
    • Sprinkle HALF of the crumb topping on the bake batter. Layer the remaining spiced apples, then top with the remaining crumb topping.
    • Bake for approximately 40 minutes, or until a toothpick inserted in the middle comes clean. Do not overcook.
    • Cool on a wire rack for 15 minutes. Gently loosen the cake from the pan, and carefully invert and transfer to a serving plate.
    • Best served warm, although I've gotta tell ya...it is good room temp or cold, too.

What can I substitute for the creamer - no one uses that in our household.

Oooh! I'd love to join you for a piece of your spiced apple cake and I'd certainly hope you'd have some coffee left with that extra extra creamer. But since I don't know where you live it looks like I'll have to make that cake for myself and brew me a nice cup of coffee with a splash of extra extra cream.

I can totally smell the cake here. Apple season is my favorite. I just love everything about it.....the apple picking, the chill in the air and definitely all the fun holidays. I love the addition of the creamer in the cake for that extra creaminess and flavor.
