📖 Recipe
Spiced Apple Crumb Coffee Cake
Ingredients
Spiced Apple Mixture
- 2 apples peeled and finely diced
- 2 TB brown sugar
- ½ teaspoon cinnamon
- ¼ teaspoon ground ginger
- ¼ teaspoon nutmeg
- ¼ teaspoon ground allspice
- Pinch of salt
Crumble Topping
- 1 cup AP flour
- ½ cup butter softened
- ¼ cup brown sugar
- ¼ cup sugar
- ½ teaspoon cinnamon
- ¼ teaspoon ground ginger
Cake
- 1 cup AP flour
- ½ cup sugar
- 2 eggs
- ¼ cup butter softened
- 6 TB Dunkin Donuts Extra Extra Coffee Creamer
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- ¼ teaspoon salt
- ¼ teaspoon cinnamon
Instructions
Spiced Apple Mixture
- Combine the diced apples and all ingredients in small bowl. Set aside.
Crumb Topping
- Stir together all dry ingredients. Work in the butter with your hands or fork until it is crumbly and has a sand like texture. Set aside.
- Preheat oven to 375 degrees. Grease and flour a 9 inch cake pan.
- In a bowl, stir together the flour, baking powder, salt and ¼ teaspoon of cinnamon. In a separate larger bowl, beat the sugar and butter together until light and fluffy. Whip in the eggs and vanilla.
- Reduce the mixer speed to low and add one tablespoon of creamer, then some of the flour mixture. Repeat, alternating between creamer and flour mixture until the batter is smooth.
- Gently fold in HALF of the reserved spiced apple mixture. Pour the batter into the prepared cake pan.
- Sprinkle HALF of the crumb topping on the bake batter. Layer the remaining spiced apples, then top with the remaining crumb topping.
- Bake for approximately 40 minutes, or until a toothpick inserted in the middle comes clean. Do not overcook.
- Cool on a wire rack for 15 minutes. Gently loosen the cake from the pan, and carefully invert and transfer to a serving plate.
- Best served warm, although I've gotta tell ya...it is good room temp or cold, too.
