Ah, the humble fried egg sandwich.
It can be done up really fancy if you'd like it to be, but it tastes just as good with the basics!

How to Make A Fried Egg Sandwich Worth Writing Home About
Bread & eggs are essential, obviously. Cheese is optional. Some type of breakfast meat.. if we have it around. Meat, while adored in our household, is non-essential to the humble yet glorious fried egg sandwich.
There is, however, ONE ingredient on a fried egg sandwich that is non-negotiable in my opinion and I guess you could say it's my mom's secret ingredient:

A lil' squirt of dijon mustard mixed with some mayo. Some people call this dijionaise.. I just call it a lil' squirt of dijon mixed with mayonnaise.
To each his own.
That lil' squirt of dijon mustard elevates a fried egg sandwich from a simple, tasty sandwich to a regular breakfast craving!
Here's how to make a tasty fried egg sandwich from start to finish:
- Melt some butter in a hot frying pan (I prefer Lodge cast iron).

2. Toast bread of choice ( I used Dave's White Bread Done Right) in melted butter. I usually toast one side more than the other!

3. Remove toasted bread, melt more butter if necessary, and fry eggs to desired doneness (although a runny egg over easy or medium makes a wonderful fried egg sandwich!)

4. When eggs are just over halfway done, melt cheese (if using) over the top of the egg.

5. At the same time, place desired breakfast meat in pan to warm it up. (I prefer using ham or leftover bacon for fried egg sandwiches).
6. Smear mayonnaise with a lil' squirt of dijon mustard on bread: my recommendation is only on one side of the bread and to leave the other side of the bread just buttery toast!

7. Assemble sandwich & ENJOY!

The best ways to make a fried egg sandwich fancy are as follows:
- Use a specialty bread (thicker might even be a bit fancier than thinner!) - think sourdough, multigrain, pumpernickel, etc.
- Upgrade your cheese! Gouda, havarti, something from Trader Joe's fancy cheese section..
- Add avocado! I was a restaurant in California recently that was charging NINETEEN DOLLARS for avocado toast. No meat, no egg. At those prices, I had to assume avocado breakfast foods are sooooo fancy!
- Add tomato. Less fancy than avocado because it's much cheaper, but flavor profile is *chef's kiss*
