I know it says McCormick Breakfast Toppers, but I added some inside, too. (I know these are for breakfast, but once you get a taste, you’ll want to sprinkle it on everything. I’m thinking salads, too.)

Beat the eggs, sour cream, seasonings together until light and fluffy. Pour into a buttered skillet or pie dish.

Then go crazy. Use whatever fresh vegetables you have on hand. We used chopped sweet bell pepper and spinach. You could use tomatoes, onions, mushrooms. Whatever you love.

For extra creaminess, we dropped in cream cheese. Who can say no to that?

Halfway through cooking, sprinkle the top of the baked omelette with your favorite shredded cheese. We used tangy Monterrey jack. But how about smoked gouda or sharp cheddar? It is all up to you to make your breakfast wonderful.

Before serving, sprinkle with a little more of that good stuff and dig in.

This Farmer’s Baked Omelette recipe can be made ahead of time. Bake the night before and reheat before serving, or pour everything into the dish and bake while you are getting ready.

Farmer's Baked Omelette

A wholesome + nutritious start to your morning, this no-fuss baked omelette will make your morning amazing.

Buy This

  • 2 tbsp salted butter
  • 8 large eggs
  • 4 tbsp McCormick Breakfast Toppers Southwest Chipotle flavor divided
  • 1/4 cup sour cream
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/8 tsp baking powder
  • 3 oz cream cheese cubed
  • 1/2 red bell pepper small diced
  • 1 handful fresh baby spinach chopped
  • 1/2 cup Monterrey jack cheese shredded

Cook That

  1. Preheat oven to 350 degrees F. Place the butter in an 8 inch skillet or pie dish. Melt in the oven. Swirl the butter around the bottom and sides of the dish to coat all sides.

  2. In a large bowl, briskly whisk together the eggs, 3 tablespoons of the McCormick Breakfast Topper, sour cream, salt, pepper and baking soda. Pour into the prepared buttered dish.

  3. Evenly drop the cream cheese cubes in the egg mixture. Sprinkle the bell pepper and spinach on top. Bake for 15 minutes.

  4. Remove the baked omelette from the oven and sprinkle with the shredded cheese. Return to the oven and bake for 15 minutes.

  5. Remove from the oven and sprinkle with the remaining Breakfast Topper. Serve warm.

Recipe Notes

Recipe can be made the night before and reheated. Or, make it ahead and bake in the morning.

    I haven’t seem these breakfast toppers in the stores yet but I am going to keep my eyes peeled. What a great way to add flavor to so many recipes. Love the omelette for a weekend breakfast.

      Listen, I’ve been sprinkling them on salads. Yum. They aren’t heavily salty or sweet. They add crunch and texture…plus some bonus nutritional value. Hope you like them.
