Let's Make Mini No Bake Key Lime Pie
Key Lime Pie makes me happy. There is no way around it. I like it baked. I like Key Lime Pie frozen. The version with meringue. The version without meringue.
I am an equal opportunity Key Lime Pie eater.
But I think this recipe for Mini No Bake Key Lime Pie is my new favorite. Part of the reason is the delicious graham crust made from Nairn's® Gluten Free Oat Grahams™.
These yummy graham crackers are made with certified gluten-free oats. There are no artificial colors or flavors or preservatives. You can use them in place of traditional style graham crackers for snacking, making S'mores, and more. Love them. They have a perfect texture and flavor.
Nairn's are found at most Gourmet and Natural Food stores. You can also purchase them through Amazon.
And they crumbled like a dream for my graham crust for the Mini No Bake Key Lime Pie.
I used cupcake liners to make sure these mini Key Lime Pies come out easily later. Slight (very small) confession. I did heat the graham crusts in the oven for 5 minutes for them to set. That's it. However, you can make these by chilling the shells before filling.
If I have violated the terms and agreement for No Bake, then take me out back and shoot me.
But finish this recipe first.
Fresh Key Lime Juice is the key to making this delicious dessert. If you cannot find Key Limes at your local grocer, you can find the juice.
Be sure to save the zest! We are going to use it both in the Key Lime Pie filling and at the end.

Instead of using egg yolks, we have combined the fresh lime juice with sweetened condensed milk. There is a chemical reaction that takes place in these two ingredients that naturally thickens the pie. Science!

To make this pie filling light and fluffy, we folded in a tub of whipped topping.
Gently spoon the Key Lime Pie filling into the prepared crusts.
You can also use a piping bag for a more refined result. Personally, I like the "rustic" and laid back look. Key West style.
Garnish with a fresh lime wedge and a few sprinkles of lime zest for gorgeous color.
Then pop these sweet-tart Mini Key Lime Pies into the fridge for about an hour.
If you can wait that long. You may have to beat your kids off with a stick to keep them away. Enjoy your Mini No Bake Key Lime Pie. It is totally ok if you have two.

Mini No Bake Key Lime Pie
Ingredients
For the Graham Crust
- 1.5 cups graham cracker crumbs
- 6 tablespoons salted butter melted
- ⅓ cup white granulated sugar
For the Key Lime Pie Filling
- 14 ounces can sweetened condensed milk
- 8 ounces whipped topping
- ½ cup fresh Key Lime juice
- 2 teaspoons fresh lime zest
Instructions
For the Graham Crust
- Line a muffin tin with cupcake liners. Combine the graham crumbs and sugar. Stir in the melted butter until all crumbs are moistened. Evenly divide the crumb mixture and press into the bottom and sides of the cupcake liners.
- Heat for 5 minutes in a 350 degree oven. Remove and cool completely. Remove liners.
For the Key Lime Pie filling
- Whisk together the condensed milk and Key Lime juice until smooth and thick. Stir in 1 teaspoon of lime zest.
- Gently fold in the whipped topping until smooth and creamy.
- Evenly divide and spoon the Key Lime filling in the prepared graham crusts.
- Garnish with fresh lime and zest if desired. Chill for one hour before serving.
