    Lemon Herb Veggie Skewers

    Ingredients Needed to Make Veggie Skewers:

    For the Lemon Herb Marinade:

    • Bertolli Extra Virgin Olive Oil
    • Lemon juice + zest
    • Basil
    • Thyme
    • Chives
    • Garlic
    • Swerve Sweetener - Just a bit to taste.
    • Salt, black pepper + red pepper flakes

    TIP: Adding just a bit of Swerve Sweetener cuts the acidity a bit and balances the flavor of the marinade without added sugars.

    For the Veggie Skewers:

    • Bell peppers - We used 1 each in green, red, and yellow.
    • Red onion
    • Baby portabella mushrooms
    • Zucchini
    • Cherry tomatoes - Pick a fun assortment for color and different flavors.

    Pick your favorite vegetables for this recipe, which is easy to do with the selection in the Publix produce department. I wanted our skewers to be full of color and different flavors and textures.

    This recipe can be made ahead of time and chilled until time to cook. You can also use any extra marinade for serving.

    How to Make Lemon Herb Veggie Skewers:

    1. First, prepare the marinade by combining the olive oil, lemon juice, lemon zest, basil, thyme, chives, garlic, spices, and sweetener. I like to shake it all together in a sealed jar. Set aside.
    2. If using wooden skewers, soak them in clean, cool water while preparing the vegetables. (If you are using metal skewers, skip this step.)
    3. Next, prepare the vegetables according to the recipe instructions below (slice, chop, etc.)
    4. Assemble the skewers by carefully threading the prepared vegetables onto the skewer, alternating between each type of veggie. I like to start and end each skewer with a pepper to hold them together.
    5. Place the skewers onto a rimmed baking sheet. Using a basting brush, brush the prepared marinade over the vegetable skewers. Let sit for about 20 minutes.
    6. When you are ready to cook, preheat your grill to 400 degrees. Make sure the grill grates are clean and well-oiled.
    7. Then place the skewers onto the grill. Lower the temperature if needed (or if using charcoal, move the skewers as needed so they "grill" instead of "burn").
    8. Cook the vegetables for about 10 - 12 minutes to desired doneness, rotating every 3 or 4 minutes to cook all sides evenly.
    9. Serve warm with additional marinade and fresh chopped herbs as desired.

    When preparing the herbs, I like to gently bruise them with the back of a spoon before I chop them. This releases more of the flavor and aroma of the fresh basil, thyme, and chives.

    This recipe can also be cooked indoors. Preheat your oven to 400 degrees and place the skewers on a broiler pan or wire rack over a drip pan. Cook for about 12 - 15 minutes until done.

    TIP: You can make the veggie skewers ahead of time. Assemble the skewers and keep them wrapped and chilled. About 20 minutes before cooking, brush with the marinade then grill.

    TIP: Use two skewers to really secure the vegetables. This helps hold everything in place (especially the softer tomatoes) and makes handling with tongs much easier.

    TIP: You can use any citrus fruit to change the flavor profile of the marinade. Think oranges, limes, etc.

    You can also add grilled fruit to your skewers for a fun twist. Think pineapple for a tropical taste, peaches for a summery side, or cantaloupe for something unique.

    The best part about this recipe? It pairs with almost any main dish. It can be served at a casual backyard BBQ with burgers and corn on the cob. They also fit in perfectly at a more sophisticated summer grilling party.

    Tips + Ideas for Veggie Skewers / Veggie Kabobs:

    • Thanks to the great produce section at your local Publix, you can pick the freshest vegetables from the best selection. Feel free to mix and match your seasonal faves to make your own style of veggie skewers.
    • Make the marinade in advance. This lets the lemon, herb + garlic flavors infuse into the Bertolli Olive Oil for maximum yummy.
    • Soak your wooden skewers to prevent them from burning on the grill.
    • Use two skewers to really secure the vegetables. This helps hold everything in place (especially the softer tomatoes) and makes handling with tongs much easier.
    • If you have a lot going on, you can prepare the vegetables and assemble the skewers in advance. Just keep them wrapped and chilled. Brush with the marinade about 20 minutes before grilling.
    • Can you marinate the vegetables overnight? You can, but the vegetables have a tendency to get a little "soggy" if you do this. Totally up to you.
    • Prepare this recipe on the grill or in the oven. See the recipe at the bottom of this post for more details.
    • Feeling fruity? Add some fruit to your skewers. Pineapple, peaches, and cantaloupe are all great fruits to grill.
    • This recipe pairs well with any main dish and other bbq side dishes. Or make those vegetarians in your life happy and serve a double batch of these at your next party.

    Ingredients
      

    For the Lemon Herb Marinade

    • ½ cup Bertolli Extra Virgin Olive Oil
    • ⅓ cup lemon juice fresh squeezed, from 1 lemon
    • 1 teaspoon lemon zest fresh, from 1 lemon
    • 1 tablespoon basil fresh, finely chopped
    • 1 tablespoon thyme leaves fresh
    • 1 tablespoon chives fresh, finely chopped
    • 2-4 cloves garlic pressed or finely minced
    • 1 teaspoon Swerve Sweetener to taste
    • ½ teaspoon salt to taste
    • ½ teaspoon crushed red pepper flakes to taste, optional
    • ¼ teaspoon black pepper to taste

    For the Veggie Skewers

    • 1 red bell pepper seeded, cut into 1 inch sized pieces
    • 1 yellow bell pepper same
    • 1 green bell pepper same
    • 1 red onion peeled, chopped into 1 inch pieces
    • 1 zucchini sliced into ¼ - ½ inch slices
    • 8 ounces baby portabella mushrooms whole, you can cut the larger ones in half
    • 1 pint cherry tomatoes

    Instructions
