    Foil Pack Dinner with Potatoes and Smoked Sausage

    Who is ready to do a little camping? *raises hand* These wholesome and easy Foil Pack dinners are perfect for your outdoor camping adventures. Made with tender baby potatoes, fresh green beans, and savory smoked sausage, this classic simple meal is easy to prep and cook. Heck, why wait for a camping trip? These are great for weeknight dinner, too.

    Foil Packs = Winner!

    Pretty sure everything you put in a foil pack turns out great. I love foil pack dinners for camping because they are:

    • Easy to prepare
    • Can be made ahead of time
    • So versatile with just about any ingredient combo you can think of
    • Simple to heat and cook (grill, oven, stove, etc.)
    • Little to no clean up

    Ingredients Needed for this Foil Pack Recipe:

    • Butter
    • Fresh green beans
    • Potatoes - I picked small, baby Yukon gold potatoes for this recipe. I just love them. You can use baby red potatoes, or even a normal potato cut into smaller pieces.
    • Smoked sausage
    • Garlic - Fresh, sliced garlic cloves are best in this recipe. You can also use garlic powder in a pinch.
    • Salt and pepper to taste

    We camp in an RV, so we have room to take our veggies with us on the road. If you can't, browse through the local grocery store or even road side stands and farmer's markets and grab fresh veggies that are in season.

    TIP: Grab a roll of HEAVY DUTY aluminum foil to assemble your foil packs with. You don't want to skimp and get the cheap kind.

    Once you have chopped and prepped your ingredients, assembly is a breeze. This recipe makes 4 individual packets, so start with 4 large sheets of aluminum foil. Place your ingredients in the center of the foil sheet, adding pats of butter throughout.

    I also like to sprinkle salt and pepper a little as I go.

    How to Make Foil Pack Dinners:

    1. Cut beans, quarter potatoes, slice garlic, slice sausage, etc.
    2. Lay 4 large sheets of heavy duty aluminum foil on a flat surface. In the center of the foil, evenly distribute the ingredients among the 4 portions.
    3. Sprinkle salt and pepper to taste as you go.
    4. Fold the left and right sides of the aluminum foil to the center, then bring the top and bottom together and fold tightly.
    5. When ready to cook, place on a heated grill and cook for 20 - 30 minutes, until the potatoes are tender.

    Cut the potatoes into similar sized pieces so they all cook in the same amount of time. I like to quarter the baby potatoes.

    You can cook these on a grill directly on the grates. Just watch for flames and flare ups. You don't want the fire to burn through the foil. Position them to the side if you need to. If you have an aluminum baking sheet or pan, you can place them inside that as well.

    Potato + Smoked Sausage Foil Packs can also be cooked in the oven. Just place on the top rack and cook at 375 (ish) degrees until done.

    TIP: Make the foil packs ahead of time. You can make these at home before you leave for your camping trip. Just seal them in a tough plastic bag and keep chilled until ready to cook. Or, make them at camp in the morning, and dinner will be ready to heat and eat when you are enjoying your time around the campfire.

    Ingredients

    • 1 pound baby potatoes quartered or halved
    • 1 pound smoked sausage sliced

    NOTE: Cooking time will vary based on the size of your slices, the method of cooking, and temperature of grill. They are done when the potatoes are tender, which takes 20 - 30 minutes.
