Pretty sure wars have been waged about Thanksgiving Dressing vs Thanksgiving Stuffing. Where I’m from, it is always a hearty cornbread dressing that wins. We don’t stuff it in anything, ya’ll. We just serve it along all the other delicious holiday recipes. I have to admit, my recipe for Southern Sage Cornbread Dressing is just a little different.

First of all, we put sausage in it. For no other reason than the fact that I love sage-seasoned sausage.

But my favorite part? I haven’t decided yet, but I’ve narrowed it down to either the toasted cubes of buttermilk cornbread or the fresh sage. Our version of cornbread dressing smells and tastes amazing.

I crave spicy food. Listen, when I was pregnant with my second daughter, I ate an ENTIRE JAR of pickled green chile peppers. In one sitting. (Maybe that’s where she got her smart-mouth? Hmmm…) But back to my point. Spicy food. These Southern Fried Firecracker Chicken Tenders are hot and spicy, just like I like ’em.

Buttermilk marinated overnight for extra zing, breaded and fried, these chicken tenders are zesty + moist + smoky. First, they are fried. Then, tossed in sauce. Next, baked. Finally, drizzled with more spicy-smoky buttered hot sauce.

I almost messed up, ya’ll.  This chili recipe was soooo close to being a two-bean venison chili, but then I remembered the third bean. The sneaky cans of Bean #3 hanging out in the back of the pantry. This is the kind of thing that keeps food bloggers up at night.

I mean, google two-bean chili. Go ahead.

Now google three-bean chili. TEN TIMES AS MANY PEOPLE WANT THREE BEANS IN THEIR CHILI. So there ya go. Bean math.

But the star of this rich, red venison chili is not the beans. It is the venison. Tender and lean chunks of last year’s deer slow simmered in chili spices. This is why the good Lord gave us spoons.
