This year, our family is simplifying our holiday and getting back to the celebration of the time spent together. My goal is to celebrate what the holiday really means to our family.
For my family, like many others, recipes are at the heart of the Christmas celebration.
Recipes like my stepmom's famous Christmas fudge. Memories of my Grandmother's boiled custard. Our annual tradition of a big Country Christmas breakfast complete with salty ham and red-eye gravy.
Every family has their own favorites. We hope this Rosemary Standing Rib Roast will become one of yours.

TIP from our TFM butcher: One day before cooking, wrap your standing rib roast in two layers of paper towels. Place on a pan and sit it in the fridge. This helps age the beef and get a perfect crust. Also, let the standing rib roast sit at room temperature for 4 hours before roasting.

We finely chopped half a cup of the fresh rosemary leaves and blended it with extra virgin olive oil. Massage the rosemary mixture over the standing rib roast. (Don't skip the sides.)
Then take a generous amount of Himalayan salt (also available at The Fresh Market), and sprinkle it evenly all over the rib roast. Press it in with your hands to ensure that it sticks to create an amazing crust.

For the first 30 minutes, you want to sear the roast at a temperature of 450 degrees. This will create that gorgeous brown crust and lock in all of the juices. Reduce the temperature and continue to cook until the standing rib roast has reached an internal temperature of 120 degrees.
(This will take about 1 hour and 45 minutes, but actual cooking time will vary based on how large your roast is, your oven, etc.)
The Rosemary Standing Rib Roast will continue to cook as it rests. Let it stand for 20 minutes before slicing. You can use those 20 minutes to admire your masterpiece.

Rosemary Standing Rib Roast
Ingredients
- 8 pounds standing rib roast 4 bones, room temperature
- ½ cup fresh rosemary leaves very finely chopped
- ¼ cup extra virgin olive oil
- 1 tablespoon Himalayan salt
Instructions
- Preheat oven to 450 degrees.
- Sit the roast onto a rack in a shallow pan. Be sure the rib side is down, fat side up. Combine the chopped rosemary and olive oil in a small bowl. Rub the top and sides of the rib roast with the rosemary mixture. Sprinkle evenly with the salt and press in with your hands.
- Place the roast in the oven and cook for 30 minutes. Reduce the temperature to 350 degrees. Cook for 1 hour and 45 minutes to 2 hours, or until the internal temperature has reached 120 degrees for medium rare.
- Remove the roast from the oven and let rest 20 minutes before slicing.
