Roasted Potato Salad

Yeah, we have a "thing" for potatoes. Call it recipe love. Roasted Potato Salad is yummy and summery and the potatoes have a perfect bite. Never mushy.

Roasted Potato Salad….yes! So delicious, and a little different than the normal mushy potato salad (although I have nothing against potatoes in any format). This salad has a deeper roasted flavor, the potatoes are more firm, and the skins make it a little more….country.

I also had something in the oven baking, so I took advantage of that heat and electricity by popping the potatoes in at the same time.
