medium, firm, peeled and small diced

lime
juiced + zested

roma tomatoes

seeded, finely diced

bell pepper
any color, seeded and finely diced

onion
peeled and finely diced

cilantro leaves
rough chopped

Instructions
In a large bowl, stir the diced peaches with the juice and zest of one lime. Let sit while prepping all other ingredients.
Add the tomatoes, peppers, onion and all other ingredients to the bowl. Stir to combine well.
Next, place about half of the mixture into a blender. Pulse to desired consistency. Stir back into the bowl.
Cover and refrigerate for one hour. Taste, reseason as desired, and serve.
