Rinse the beans well, then place in a large pot with 10 cups of water. Bring to a boil, then reduce heat. Cover and cook at a very low boil for 1 hour. Stir the beans frequently.
Stir in the remaining water, ham, tomatoes, onion, celery, garlic and hot sauce. Cover and simmer for 45 minutes or until the beans are tender.
