Line a 9×9 square baking dish with parchment paper, making sure to cover the sides and leave some paper outside the pan for grabbing onto later.
First, in a small bowl stir together the vanilla, mint extract, green food coloring and salt. This makes it easy to stir into the fudge later.
Next, combine the white chocolate chips with the sweetened condensed milk in a large glass microwave safe bowl.
Microwave the mixture for 1 minute. Stir and let the heat melt the chocolate. Stir until smooth. If you need to, microwave for another 30 seconds but don’t overheat.
Using the rubber spatula, quickly work the green coloring / flavor mixture into the fudge until well combined.
Spread the mixture into the prepared pan. Sprinkle generously with red sparkle sugar and press the sprinkles gently into the fudge. Press a holiday decoration (like the green candy pearls shown in picture) evenly on top where each square will be.
Let the fudge set at room temperature or in the fridge until it has set.
Once set, carefully lift out the fudge by grasping the edges of the parchment paper. Transfer to a flat surface and cut into squares.
