First, preheat your oven to 375 degrees. Spray a 9×9 (or larger if using 6 peppers) with non-stick spray.
Next, slice ½ inch from the top of the peppers. Remove the seeds and white membranes inside the bell peppers. Discard the guts.
Then, slice a very thin layer off of the bottom of the peppers so they will stand up straight. Place the peppers in the baking dish bottom side down.
In a large bowl, combine the ground beef with a 1 cup of the BBQ sauce, 1 cup of the cheddar cheese, and all remaining ingredients. Combine well.
Press the beef mixture into the prepared bell peppers, filling to the top.
Top each pepper with the remaining BBQ sauce. Cover loosely with foil and bake for 1 hour.
Remove the stuffed bell peppers from the oven. Uncover and sprinkle with the remaining cheese. Return to the oven and bake for 5 minutes until the cheese is melted.
Finally let the peppers stand 15 minutes before serving.
Notes
Nutritional information is based on 4 very large peppers. You can make this recipe in smaller servings by using 6 normal sized peppers. Or, stretch it into 8 by slicing the peppers in half lengthwise.
