20ozbag of 15 Bean Soup Dry Bean Mixkeep the seasoning packet!
14cupsor more of water, divided
3cupsdiced ham
28ozcan petite diced tomatoesundrained
1medium onionpeeled and chopped
4stalks celerychopped
1TBminced garlic
1TBhot sauceany
All purpose seasoning to taste
Instructions
Rinse the beans well, then place in a large pot with 10 cups of water. Bring to a boil, then reduce heat. Cover and cook at a very low boil for 1 hour. Stir the beans frequently.
Stir in the remaining water, ham, tomatoes, onion, celery, garlic and hot sauce. Cover and simmer for 45 minutes or until the beans are tender.

Notes
This makes excellent leftovers.You can also add ½ cup of rice to this during the last 45 minutes. Just increase the amount of water by 1 cup or so.
