This easy recipe for loaded fries is game day perfection. Start with crisp, golden fries and top with melty cheese, savory bacon, jalapenos and a signature spicy diablo sauce.
In a small bowl, stir together the mayo, chili sauce, Sriracha, mustard, Worcestershire, cayenne, and all other spices. Stir well and set aside. I like to transfer it to a squirt bottle for easy serving.
For the Loaded Fries
Preheat your oven to package directions on the back of the fries. Arrange the potatoes in a single layer on a large baking sheets and cook until done. (See package.) During the last half of cooking, place two cast iron skillets in the oven on the bottom rack so they can heat.
When the fries are done, transfer the crispy fries to 2 heated skillets. Sprinkle shredded cheese and crumbled bacon evenly over the top of each fry-filled skillet. Next, place the skillets in the oven for 4 – 6 minutes until the cheese is melted through.
Finally, top the loaded fries with a generous amount of the diablo sauce, jalapenos, and green onions. Serve with sour cream and additional Sriracha if desired.
