For the Cherry Cake

  • 16 ounces white cake mix
  • 3 eggs
  • 3/4 cup vegetable oil
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 3 ounces cherry flavored gelatin
  • 3/4 cup maraschino cherries finely chopped
  • 1/3 cup cherry juice

For the Whipped Frosting

  • 1 1/2 cups heavy cream chilled
  • 2/3 cup powdered sugar
  • 1/2 teaspoon vanilla
  • 15 maraschino cherries drained

For the Cherry Cake

  1. Preheat oven to 350 degrees. Grease an 8x11 pan and set aside. Chop maraschino cherries into small pieces and set aside.

  2. In a mixing bowl, beat together the cake mix, eggs, oil, milk, and vanilla until smooth.

  3. Add the gelatin and beat to combine. Fold in the chopped cherries, and pour the cake batter into the prepared baking pan.

  4. Bake for 35 minutes or until a pick inserted in the center of the cake comes out clean. Cool the cake completely. 

  5. Poke holes in the cake and drizzle the reserved cherry juice over the cake.

For the Whipped Frosting

  1. While the cake is cooling, whip chilled cream until light and fluffy. Add in a splash of vanilla and powdered sugar and whip until smooth.

  2. Spread the frosting on the cooled cake and top with cherries.

    Slice into squares and serve!
