I have a confession. I don’t cook from scratch every night. Many of you do, and I think that is awesome. But some nights, I just want something fast + easy. (And I’m not talking about a bowl of popcorn. Yes, I’m guilty of “popcorn dinner”.)
One of my secret fast dinners? Soup + Salad Night. A savory and creamy soup served with a light and healthy salad.
Prepare soup according to package directions.
Serve soup hot with the butter lettuce leaves and vegetables. Serve with your favorite salad dressing.
