  • 1 cup old fashioned rolled oats
  • 1 apple peeled and finely chopped
  • 1 cup all purpose flour
  • 1 cup buttermilk
  • 1 egg
  • 1/2 cup butter melted
  • 1/2 cup packed brown sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp vanilla
  • 1/2 tsp nutmeg
  • 1/4 tsp ground allspice

Cook That

  1. Preheat oven to 400 degrees. Line a muffin tin with cupcake papers (or spray with butter flavored non stick spray). Set aside.
  2. In a mixing bowl, melt butter and let cool slightly. By hand, stir in the buttermilk, egg, and vanilla until well combined.
  3. In a separate bowl, combine all of the dry ingredients.
  4. Gradually add the dry ingredients into the wet mixture. Stir until the batter is just combined, do not overstir.
  5. Gently fold in the diced apples.
  6. Spoon the mixture into the muffin pan, filling each cup two thirds full.
  7. Bake at 400 for 20 minutes, or until a toothpick inserted in the middle is clean.
  8. Serve warm with butter.
