  • 1 1/2 cups all purpose flour
  • 1 cup self rising cornmeal
  • 3 TB sugar
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 1/4 cup milk
  • 1/4 cup melted butter
  • 2 eggs
  • 3 TB vegetable oil

Cook That

  1. Heat oven to 375. Pour 3 tablespoons of vegetable oil into a cast iron skillet. Set aside.
  2. In a medium sized bowl, combine flour, cornmeal, sugar, salt and baking soda.
  3. Add milk, butter, and eggs, and combine until just wet. Let the batter sit for 5 to 10 minutes.
  4. While the batter is resting, put skillet in the oven to heat the oil. Remove, and carefully pour the batter into the hot pan.
  5. Return to the oven and bake for approximately 35 minutes, until the cornbread is golden brown and a toothpick inserted in the center comes out clean.
