Ingredients

For the Salad

  • 4 cups Iceberg lettuce
  • 4 cups Spring Mix greens
  • 1/2 pint Cherry tomatoes halved
  • 1/2 pint White mushrooms sliced
  • 1/2 pint Ripe raspberries rinsed and drained
  • 1/2 cup Sliced beets
  • 1 cup Snow peas
  • 1/2 cup Sweet mini peppers sliced
  • 1/4 cup Red onion sliced
  • 1/4 cup Capers

For the Herby Homemade Green Goddess Dressing

  • 1 cup Greek yogurt
  • 1 cup fresh parsley
  • 1/2 cup mayo
  • 2 anchovies
  • 3 tablespoons fresh chives
  • 3 tablespoons milk
  • 2 tablespoons fresh dill
  • 2 tablespoons fresh basil
  • 1 tablespoon fresh tarragon
  • 1 teaspoon lemon juice
  • 1/2 teaspoon minced garlic
  • Salt & Pepper to taste

Instructions

For the Fit + Fresh Raspberry Summer Salad

  • Tear, chop and slice vegetables as preferred. Toss together and serve with dressing.

For the Herby Homemade Green Goddess Dressing

  • Chop all of the herbs. Combine with all other ingredients and refrigerate.
