Combine the diced apples and all ingredients in small bowl. Set aside.
Crumb Topping
Stir together all dry ingredients. Work in the butter with your hands or fork until it is crumbly and has a sand like texture. Set aside.
Preheat oven to 375 degrees. Grease and flour a 9 inch cake pan.
In a bowl, stir together the flour, baking powder, salt and ¼ teaspoon of cinnamon. In a separate larger bowl, beat the sugar and butter together until light and fluffy. Whip in the eggs and vanilla.
Reduce the mixer speed to low and add one tablespoon of creamer, then some of the flour mixture. Repeat, alternating between creamer and flour mixture until the batter is smooth.
Gently fold in HALF of the reserved spiced apple mixture. Pour the batter into the prepared cake pan.
Sprinkle HALF of the crumb topping on the bake batter. Layer the remaining spiced apples, then top with the remaining crumb topping.
Bake for approximately 40 minutes, or until a toothpick inserted in the middle comes clean. Do not overcook.
Cool on a wire rack for 15 minutes. Gently loosen the cake from the pan, and carefully invert and transfer to a serving plate.
Best served warm, although I've gotta tell ya...it is good room temp or cold, too.
