Strong brewed Dunkin Donuts coffeeamount to desired consistency
Instructions
Preheat oven to 375 degrees. Line cookie sheets with parchment paper and set aside.
In a medium sized bowl, stir together the flour, baking soda, ground coffee, and salt. Set aside.
Beat the sugars and butter together in a large mixing bowl for 2 minutes. The mixture will be light and fluffy. Add the brewed coffee and eggs. Beat on medium for another 2 minutes.
Slowly add the flour mixture a little at a time. Once all of the flour has been incorporated, gently fold in the salted caramel chips until evenly distributed.
Spoon HALF tablespoon sized mounds of cookie dough onto the parchment lined baking sheets. Place them 2 inches apart.
Bake for about 9 - 10 minutes until the edges are golden. Remove and let cool for 5 minutes on the pan. Using a large flat spatula, transfer the cookies to wire racks to cool completely.
To make the coffee chocolate drizzle, place the dark chocolate pieces in a microwave safe bowl. Microwave in 15 second increments, stirring after each heating. When the chocolate is mostly melted, stir in a teaspoon of coffee. Stir until smooth. Continue to microwave, stir in coffee and smooth until the mixture has reached the desired consistency and taste.
Drizzle the cookies with the chocolate mixture and enjoy!
Notes
This recipe makes about 7 dozen cookies when portioned out to ½ Tablespoon sized mounds. Refrigerate the unused cookie dough while the cookies are baking.Let the cookie sheets cool between baking batches for the best results. Do not overcook. The cookies may appear underdone when you take them out, but they will continue to cook as they cool. Keep cookies stored in a lidded container.
