So I had this bag of plain old carrots in the refrigerator. They were staring me down every single time I opened the fridge door. You know when you buy the super big bag of carrots because they are on sale? After a salad or two, you’re like…oh….carrots. I have…carrots. If you have a few pantry basics, you can turn blah-carrots into delicious Honey Butter Carrots. Roasted carrots. Slightly sweet and a little savory carrots.
Perfect side dish carrots.
Honey Butter Carrots are a simple and easy side dish that your family will love. Oh, and did we mention they are roasted? Yum.
Is it just me or is pouring butter on vegetables and roasting them in the oven one of the yummiest things? Like…ever? So simple and so good.
These super easy Honey Butter Carrots are no exception. This recipe is one of those super side dishes when you need something easy to go with your main dish.
Having roasted chicken? Honey butter carrots would be perfect.
We simply whisked together melted butter, a little honey, minced garlic, a squirt or so of lemon juice, salt and pepper.
That’s it. Whisk it up, pour it over your peeled and chopped carrots. (You can make this recipe with baby carrots…but I had a great deal on the monster bag of ugly adult carrots. 🙂 )
Toss the carrots around in the honey butter mixture. Then spread them evenly on a baking sheet or dish.

Pop the carrots into a hot oven for 20 minutes. Move them around a little, then back in for another 20 – 25 minutes until the Honey Butter Carrots are roasted brown and tender.

Honey Butter Carrots
- 8 large carrots peeled and chopped into bite sized pieces
- 1/4 cup butter melted
- 1 TB honey
- 1 tsp minced garlic
- 1/2 tsp lemon juice
- 1/8 tsp salt
- 1/8 tsp black pepper
- Preheat oven to 400 degrees.
- In a small bowl combine the melted butter with the honey, garlic, lemon juice, salt and pepper. Whisk to combine.
- Pour over the carrots. Toss the carrots to coat. Spread evenly on a baking dish or baking sheet.
- Bake for 20 minutes. Flip the carrots and return to the oven for another 20 - 25 minutes until the carrots are browned and tender.
