Cucumbers are a staple ingredient in our home. We enjoy them in salads or as a fast snack. Fresh cucumbers sliced with onion in vinegar and water is a simple side dish my family goes crazy for.

Do you love cucumber peel or no? I’m 50/50. I love the color cucumber peel adds to recipes, but sometimes the peel is bitter. I almost always remove half of the cucumber peel using a vegetable peeler. This way I get the color I want.
For this recipe, cut the cucumber into quarters lengthwise. Then scrape the seeds out with a paring knife. (If you leave the seeds in, the salad will be watery and lose some crunch.)

- 2 cups diced cucumber (about 2 medium, seeded)
- 1 cup chopped cauliflower
- 1/2 cup diced red onion
- 1/2 cup diced red bell pepper
- 1/2 cup plain greek yogurt
- 2 TB fresh dill, finely chopped
- 2 TB fresh chives, finely chopped
- 1/2 tsp minced garlic
- Salt & pepper to taste
Partially peel each cucumber. Cut into half lengthwise, then into quarters. With a small knife, gently cut the majority of seeds away from the cucumber. Cut the remaining cucumber into a small dice.
Combine the diced cucumbers with all other ingredients. Season with salt and pepper to taste.
Chill for 30 minutes before serving.
