There is no better time to eat healthy than summer. Fresh ingredients are at their peak. Healthy fruits and vegetables are typically less expensive and easy to find.  One of my favorite vegetables is the cucumber.

Cucumbers are a staple ingredient in our home. We enjoy them in salads or as a fast snack. Fresh cucumbers sliced with onion in vinegar and water is a simple side dish my family goes crazy for.

This recipe for Greek Yogurt & Herb Cucumber Salad is an easy preparation of cucumbers and seasonal vegetables. Not only is this a fast recipe, it is also healthy. Indulge, my friends. Indulge. Eat the whole bowl if you want.

Do you love cucumber peel or no? I’m 50/50. I love the color cucumber peel adds to recipes, but sometimes the peel is bitter. I almost always remove half of the cucumber peel using a vegetable peeler. This way I get the color I want.

For this recipe, cut the cucumber into quarters lengthwise. Then scrape the seeds out with a paring knife. (If you leave the seeds in, the salad will be watery and lose some crunch.)

To maximize the crunch of this healthy cucumber salad recipe, we tossed in our favorite vegetables. Crisp red bell peppers, red onions, and cauliflower = perfection.

Stir the cucumber salad ingredients together well to make sure that every bite is coated with the Greek yogurt and herb dressing. You want every mouthful full of flavor.

Finally, cover and chill for 30 minutes before serving. The garlic and simple seasonings will blend with the vegetables and yogurt to create a lightly dressed dish.

A fresh and healthy salad with diced cucumbers, red onions, bell peppers lightly tossed in a Greek yogurt and herb dressing.

Buy This

  • 2 cups diced cucumber about 2 medium, seeded
  • 1 cup chopped cauliflower
  • 1/2 cup diced red onion
  • 1/2 cup diced red bell pepper
  • 1/2 cup plain greek yogurt
  • 2 tablespoons fresh dill finely chopped
  • 2 tablespoons fresh chives finely chopped
  • 1/2 teaspoon minced garlic
  • Salt & pepper to taste

Cook That

  1. Partially peel each cucumber. Cut into half lengthwise, then into quarters. With a small knife, gently cut the majority of seeds away from the cucumber. Cut the remaining cucumber into a small dice.
  2. Combine the diced cucumbers with all other ingredients. Season with salt and pepper to taste.
  3. Chill for 30 minutes before serving.
