This meal idea has a little twist to it. Instead of a plain bowl of soup and a boring side salad, we are serving a delicious soup option and fresh lettuce wraps. Fresh Lettuce Wraps are a fun way to get more veggies into your meal plan. Your family will love them.
I have a confession. I don’t cook from scratch every night. Many of you do, and I think that is awesome. But some nights, I just want something fast + easy. (And I’m not talking about a bowl of popcorn. Yes, I’m guilty of “popcorn dinner”.)
One of my secret fast dinners? Soup + Salad Night. A savory and creamy soup served with a light and healthy salad.
This isn’t really a recipe, ya’ll. Let’s call it Weeknight Inspiration. Or Mom Menu Must Have. Easy Dinner Magic.
You can have Soup + Salad Night on the table in about 15 minutes. Unless you are a really slow veggie chopper. In that case, make it 20 minutes.
First we are going to share a little secret of ours. Well, maybe it isn’t a secret, but it is definitely an item we keep in our pantry for nights like this. Idahoan® Steakhouse® Soups.
I can’t think of a better way to get restaurant quality potato soup in 5 minutes, can you? In your kitchen, on a weeknight, and make everyone around the family table happy? Nope. This is the answer.
Our favorite flavor is the Idahoan Steakhouse Loaded Potato Soup. Come on…a loaded baked potato in a soup? Sold. Every. Single. Time. Good stuff. And this is coming from a family full of potato soup experts.
You can also pick up their Creamy Potato flavor for a more traditional choice, Cheddar Potato, or splurge on the Cheddar Broccoli. (Also a family pick.) Idahoan Steakhouse Soups bring together real, red Idaho potatoes with seasonings and real cheeses for a creamy taste in ever bite. (Just add water.)
Look at this… so savory and cheesy and creamy.
When we have soup at our house we usually have something to go with it. A small sandwich, maybe some cornbread, or a light salad. For this Soup + Salad Night, I made Fresh Lettuce Wraps. Same ingredients as a salad, just in a fun format.
I’m 99% sure that kids eat more vegetables if they get to play with them first, so this is a major mom score.
For our lettuce wraps we used an easy packaged brocolli slaw mix with crunchy broccoli, red cabbage, and carrots. (Grab those convenience items when they are on sale.)
We sliced some sweet bell peppers for more color and crunch and added crisp sliced radishes. Wrap up in a leaf of butter lettuce and top with your fave dressing. (Check out our easy recipe for Molasses Bacon Vinaigrette.)
Mix your lettuce wraps up and use your own veggies. Sprouts, cabbage, tomatoes…anything goes.

Soup + Salad Night with Fresh Lettuce Wraps
Ingredients
- 1 package Idahoan Steakhouse Loaded Potato Soup prepared to package directions
- 1 small head butter lettuce
- 3 cups broccoli slaw mix
- 2 bell peppers sliced
- 1 cup radishes sliced thin
Instructions
- Prepare soup according to package directions.
- Prepare vegetables.
- Serve soup hot with the butter lettuce leaves and vegetables. Serve with your favorite salad dressing.
- Super easy, right?
