The back-to-school madness is starting to take hold. My house is messier. My lazy summer-time dream has been rudely awakened. My leisurely afternoons of coming home and preparing yumminess have been …let’s call it…unprepared.

I will not let the hectic back-to-school routine get in the way of making delicious treats.

Frozen Peach Pie Bars put me back on track. Lightly sweetened, cool and refreshing, with the familiar goodness of graham-cracker crust, this dairy-free dessert will be a hit with the kids. (Think after-school snack or surprise dessert. )

Dairy Free Frozen Peach Pie Bars

The key ingredient to this light and frozen dessert is the New Silk® Peach & Mango Dairy-Free Yogurt Alternative. It has a smooth, creamy texture and bright, fruity taste.

Exactly the flavor I was looking for a lighter dessert.

Our recipe takes only minutes to prepare. It is fuss-free enough to make in the morning and pop in the freezer for after school enjoyment.

Or, make it in a few minutes when you get home, and it will be ready to eat after dinner or the next day.

First? In a baking dish, crumble a graham cracker crust in the bottom. Yep. Just crumble it up.

Then whip a can of chilled dairy-free coconut milk with vanilla and honey until it is light and frothy. Then, stir in the Silk® Peach & Mango Dairy-Free Yogurt Alternative and the Silk® Vanilla Dairy-Free Yogurt Alternative until nice and creamy.

Pour the lightly sweetened yogurt mixture over the graham cracker crust. Finally, sprinkle with fresh fruit.

We used a chopped whole peach, but feel free to use mangoes instead. (Or better yet, a combination of the two.) For this recipe, we used 1 cup of fruit.

This frozen yogurt-alternative dessert recipe is dairy-free and contains no artificial flavors or funny business.

That’s it! Just cover and freeze until set. The longer you freeze it the harder it will be. (Tip: Let sit at room temperature before serving to make slicing and serving a breeze.)

Serve with extra graham crumbles.

This dairy-free frozen yogurt alternative dessert also works great in popsicle molds. Just blend it up, pour into molds, sprinkle the top with graham crackers and freeze. Yay, mom!

Cook That:

In the bottom of a large pie dish, 8x12 baking dish or 9x9 dish, crush the graham cracker crust and layer evenly. (If you are using a pie plate, no need to crush it.)

In a large cold metal bowl, whip the coconut milk with the vanilla and honey until it is light and airy. It will be frothy but not stiff. Blend in both flavors of Dairy-Free Yogurt Alternative until creamy.

Pour the mixture on top of the graham crackers. Sprinkle the peaches over the top (they will sink into the yogurt mixture).

Cover and freeze for 4 hours until firm. (If you freeze overnight, it will be very solid and you will want to let it thaw a little in the fridge before serving.)

To make cutting and serving easier, let sit at room temperature for several minutes.
