This easy recipe for Honey Citrus Salad is just for me. You know those precious weekend mornings you get all alone? It doesn’t happen often. The kids are at a sleep over. The husband is off hunting or whatever…you really don’t care. You. Are. Home. Alone!!
Wake up…total silence. You brew yourself some delicious coffee, snuggle up in a blanket in your favorite chair. And sit. In peace and quiet. Alone. Then you get hungry. What to eat? Wait…I can make anything I want. In a serving size meant for one person. After a quick survey of the fridge and pantry, I went for fruit. Simple, fresh and with a touch of honey and cinnamon, so delicious!
A bright and healthy treat for one : Honey Citrus Salad.
My favorite thing about this Honey Citrus Salad? EASY.
Use whatever citrus fruit you have on hand. I had a ruby red grapefruit and a couple of oranges.
Simply cut the peel and pith (that bitter white stuff) away from the fruit. (Apparently I was enjoying my day alone so much I didn’t bother to take a picture of this step.)

Ok, now here comes the hard part. Drizzle with honey and sprinkle with cinnamon. Stir and let it rest for about 5 minutes for the fruit to blend with the honey and spice.

Honey Citrus Salad
Bright and refreshing healthy breakfast for one loaded with sweet citrus with a hint of cinnamon.
- 1 ruby red grapefruit
- 2 - 3 oranges
- 1/2 TB honey
- 1/8 tsp cinnamon
- Carefully cut the peel and pith away from the citrus fruit. With a small paring knife, cut the fruit sections out and place in a bowl.
- Add honey and cinnamon and stir. Let sit for 5 minutes.
