Balsamic Whole Roasted Cauliflower

I am crazy about easy side dishes. This one just might take the cake. Minimal prep time, and no chopping (yay!). Seriously, all you do is mix up an easy spiced balsamic drizzle and pour it on top of a whole head of fresh cauliflower. It doesn’t get much simpler than Balsamic Whole Roasted Cauliflower.

You’ll kick yourself once you try it.  Why? For not having done it before. One of those major “DUH” moments for me. Can’t wait to try this again with all types of toppings and spices. The only limitation to the roasted cauliflower dishes you can create is your imagination.

Wanna know the best part? This simple and flavor-packed side dish is low-calorie and low-carb.

Cauliflower is one of my all-time favorite vegetables. I love it raw dipped in veggie dip. The crunch and cabbage-y flavor satisfies my snack cravings. I also love it steamed, riced…even combined with cheese and egg for a low-carb cauliflower crust.

I’ve tossed it in hot sauce, baked it, roasted it, mixed it in a salad. But this is the first time I have ever roasted cauliflower whole.

Yes, the WHOLE HEAD OF CAULIFLOWER. At one time. No messy chopping and random bits of cauliflower falling everywhere.

This is hardly a recipe but more of an idea. A few simple ingredients from your pantry is all it takes to make a plain head of cauliflower something delicious.

Combine balsamic vinegar and olive oil with spices. Feel free to change it up. Not a fan of balsamic vinegar? No worries. Make this your own. How about butter and garlic? Or hot sauce and chili flakes? Or a modest seasoning with oil, salt and pepper.

Our mix contained a basic Italian seasoning blend, minced garlic, salt and pepper in addition to the olive oil and balsamic vinegar.

Pour your seasoning mixture over the head of cauliflower. I used my hands to really mash the herbs into the nooks and crannies of the cauliflower. (To help ours stick better, we used just a little bit of honey. Not a lot. Just enough to cut the acidity of the balsamic and help the balsamic and oil mixture stick. No worries, it doesn’t taste sweet.)

Pop the lid on your dutch oven and put it in the oven. Baking times will vary based on how your oven cooks, the size of your cauliflower and how tender you want it.

Balsamic Whole Roasted Cauliflower is a great side dish to have cooking in the oven while you are preparing the rest of your meal or working around the house.

When the roasted cauliflower is tender all the way through, it is ready to slice and serve.

  • 1 head of cauliflower trimmed, washed and dried
  • 1/2 cup olive oil
  • 6 TB balsamic vinegar
  • 1 TB honey
  • 4 tsp Italian seasoning blend
  • 1 tsp minced garlic
  • 1 tsp salt
  • 1/4 tsp ground black pepper

Cook That

  1. Heat oven to 400 degrees. Place the head of cauliflower in the bottom of a dutch oven.
  2. Combine all the other ingredients and pour over the cauliflower evenly.
  3. Place a lid on the dutch oven, and roast the cauliflower for approximately 45 minutes until tender in the center.
  4. Slice and serve.
  5. Cooking times will vary based on oven and size of cauliflower.
