Let me preface this recipe with stating these are not ordinary hot dogs. They are super-jumbo, all beef hot dogs from a local butcher shop. Although you can try to pull off Bacon-Wrapped Cheese-Stuffed Hot Dogs with little dogs, but really...why would you? These are killer. Absolutely drool-worthy, tailgate tasty, Saturday night party, 4th of July awesome, second Tuesday in December, anytime grilled dogs.

You know when you try to do something nice for your significant other? They have been working hard, putting in extra hours, and just deserve to come home to amazing food? (Yes, my husband considers bacon and beef hot dogs to be amazing food. I'm a lucky girl.)
That is where this idea started.
Stopped by our favorite local source for all beef, super jumbo hot dogs. (Shout out to Trolinger's!)
"Give me some of that pepper jack cheese," I said.
Pretty sure I giggled out loud while I said it. Cheese makes me happy.
Had them slice up that country-style bacon thick! Yep we are going all out.

While they were cooking, we brushed the with a little BBQ sauce. Just because.
What really made this a perfect grilled meal with my sweetheart? Our sweet and spicy mustard sauce.
I made it to dip our super crispy kettle-cooked chips in, but on top of our hot dogs, with our homemade pickle relish, caramelized grilled onions and fresh tomato. WOW.
I highly recommend using super soft, bakery fresh hoagie buns for this. You've come this far, don't use a regular old bun now.

Bacon-Wrapped Cheese-Stuffed Hot Dogs
Ingredients
- 12 Jumbo Beef Hot Dogs
- 24 slices bacon
- 12 slices pepper jack cheese
- 12 tablespoons BBQ sauce for basting
- Toothpicks to secure the bacon
- 12 Bakery hoagie buns or large hot dog buns
- 1 cup Grilled onion
- ½ cup Pickle relish
- 1 Fresh tomato chopped
For the Mustard Sauce
- 5 TB yellow mustard
- 4 TB BBQ sauce
- 1 ½ TB Italian dressing
- 1 TB brown sugar
- 1 teaspoon Franks hot sauce
- ½ teaspoon paprika
- ¼ teaspoon black pepper
Instructions
- Slice each hot dog ¾ of the way through, cutting lengthwise.
- Cut the cheese into strips, and stuff each hot dog with cheese. Wrap with bacon, and secure with toothpicks.
- Grill over medium high heat, turning frequently and basting with BBQ sauce. Cook until bacon is done.
- Combine all mustard sauce ingredients. Serve with the hot dogs on warm buns along with grilled onions, pickle relish and fresh chopped tomato.
